Adolfo Henrique Vieira Ferreira, a fourth-generation farmer known throughout his region as a pioneer of specialty coffee in Brazil, operates the 130-hectare Fazenda Passeio in the south of Minas Gerais. The steep slopes of the farm mean that his coffees are exclusively handpicked, an uncommon method in a country where mechanical harvesting is the standard. Adolfo favors this additional level of quality control for his coffees, and along with his dedication to environmental stewardship and equitable support for his workers, speaks to his trailblazing commitment to elevating Brazil specialty coffee. A very nice and delicate Brazil that highlights on the acidity and not as much driven by body - honey graham, steamed milk sweetness, honey, maple, lemon curd, cocoa powder, dried fruit, toffee, cranberry.
Heart it if you’d brew it, or pass.
Tester Coffee is a high-acidity coffee from Minas Gerais, Brazil. Acidity means a bright, lively taste, not a sour cup. The lemon curd note is part of that brightness.
How to pour over Tester Coffee. It is a high-acidity coffee from Minas Gerais, Brazil.
High acidity shows up best through paper. The brightness stays clear instead of muddy.
You’ll need
Tester Coffee breaks down as fruity, citrus, chocolate and caramel.
Fruity×1
dried fruit
Ripe fruit. Berries and stone fruit taste juicy and sweet, not sharp.
Citrus×1
lemon curd
A bright, zesty edge. Lemon, orange, or grapefruit show up as sparkle, not sour coffee.
Chocolate×1
cocoa powder
Cocoa sweetness. It tastes round and familiar, especially as the cup cools.
Caramel×4
honey graham, honey, maple, toffee
Cooked sugar. Toffee, honey, or maple sit with the roast instead of tasting like fruit.
Other×1
steamed milk
A note outside the main families. It still shapes the cup, just not in one tidy slice.
