This red bourbon natural from Villa Pastora in Palestina, Huila is a limited release from Applied Arts Coffee, sourced through importer Primavera Coffee. The farm was acquired in the 1980s by Pastora Anacona, grandmother of Yulieth and Gerson Mora. Now in its third generation, the Mora Ortega family focuses on differentiated, high-quality coffees. Yulieth's father, Álvaro Mora, maintains the legacy. The farm employs sustainable methods, supports the local community by buying cherry from neighbors, and offers fermentation advice and drying services. This lot is floated to remove less dense and unripe cherries, then undergoes 96 hours of anaerobic fermentation in barrels, followed by 15 days of patio drying. The coffee features cherry and citrus notes, with a sparkling acidity balanced by creamy sweetness. It is roasted on the light side of medium-light to highlight these flavors.
