Decaf is back! Notes of maple syrup, candied orange, and marshmallow shine through, with a soft, juicy body and a natural sweetness that makes this decaf pleasantly expressive. Brought to you via Cofinet, from the Popayán region in Cauca, Colombia, this decaf is cultivated by smallholder farmers at elevations ranging from 1,500 to 2,070 meters. The beans are gently decaffeinated using ethyl acetate (E.A.), a naturally occurring compound derived from sugarcane. After washing and milling, the beans are steamed to open their pores, then soaked in an E.A. bath where the enzyme attracts and draws out caffeine molecules. Unlike other decaffeination methods, this process preserves the coffee's natural sweetness and subtle fruitiness! This mixed-variety lot offers a lively, nuanced cup with all the character you'd expect from a high-quality Colombian coffee.
Heart it if you’d brew it, or pass.
E.A. Decaf Popayán is a medium-acidity coffee from Popayán, Cauca, Colombia. Acidity here is a gentle brightness, not sourness. The candied orange note is part of that brightness.
E.A. Decaf Popayán breaks down as citrus, caramel and sweet.
Citrus×1
candied orange
A bright, zesty edge. Lemon, orange, or grapefruit show up as sparkle, not sour coffee.
Caramel×1
maple syrup
Cooked sugar. Toffee, honey, or maple sit with the roast instead of tasting like fruit.
Sweet×1
marshmallow
Dessert sweetness. Vanilla, cream, or cookie reads as sugar rather than fruit.
