A special coffee from the farm in Pijao, Quindio, Colombia that underwent carbonic maceration processing. Whole coffee cherries are fermented under anaerobic conditions before drying. Champagne yeast is added to kick-start fermentation, creating vibrant flavor profiles. This light-roast coffee drinks a little darker with a medium body and notes of tart cherry juice and Hershey's Special Dark bars.
