Sourced through our friends at Unblended, this release highlights an exciting new chapter for Caicedo's young producer community and showcases the quality and potential emerging from this region. Their journey began when producer Danilo Flórez shared Chiroso seeds with them, inspiring exploration into differentiated varieties. With guidance from producer and processor Elkin Diosa, they began learning the craft of fermentation and processing. Chiroso is a distinctive variety first identified in Antioquia, Colombia, believed to be a natural mutation of Ethiopian landrace varieties. It's prized for its complexity often showing floral sweetness, fruit-forward character, and a tea-like body. This washed Chiroso undergoes a 48-hour cherry fermentation in open tanks before being de-pulped, washed, and dried on sun beds until reaching 12% moisture.
